Orange and Rava Idli Topped With Coriander Chutney – Quick LunchBox Recipe

The winters are here, the best time to enjoy seasonal fruits and greens. This gives us more options to pack healthy and wholesome dabba for our little one. Oranges are loaded with goodness that includes building a healthy immune system, a super source of vitamin C, potassium, soluble fiber and a lot more. The best part is, it keeps the child well hydrated.

Rava Idli  – Quick LunchBox Recipe

Rava idli is rich in iron, vitamin B complex, zinc, and magnesium. You can increase the nutritional value by adding mixed veggies and nuts. I have topped the Rava idlis with coriander chutney. It is surely one of my favourite combinations. Coriander leaves are loaded with antioxidants, boosts brain, skin and digestive system . While offering food to your child, always talk about the nutritive values, it will motivate them to be a healthy eater. Without any delay, let’s get started to the recipe.

Ingredients to Prepare Rava Idli

  • Rava – 1 cup
  • Curd – 1 cup
  • Mixed Vegetables – ¼ cup (finely chopped beans, carrot, capsicum)
  • Green peas- 10-12 nos
  • Ginger – 1 teaspoons finely chopped
  • Cashews and Almonds – 5 ( roughly chopped)
  • Mustard seeds – 1 teaspoon
  • Asafoetida – 1 pinch
  • Gingelly oil – 2 teaspoon
  • Curry leaves – 1 spring
  • Eno or baking soda – 1 spoon
  • Salt – To taste

Method to Prepare Rava Idli

1. Take a wok, heat gingelly oil and add mustard seeds. Allow it to sputter. Add ginger, cashews, almonds, mixed vegetables, peas, and curry leaves. Roast everything well for 5-7 minutes in medium flame or until the Rava is golden brown.
2. Once everything is roasted well, allow the Rava idli mix to cool
3. Take a large mixing bowl, add Rava idli mix, curd, and salt. Mix well and let this batter sit for 12-15 minutes. The curd will absorb rava.
4. After 15 minutes check the Rava idli batter it should be thin. If the final batter is thick, add water to make a perfect Rava idli batter.
5. Add eno to the Rava idli mix.
6. Grease the idli plate with ghee and fill 3/4 mold with the batter. And keep inside the idly vessel with 2 cups of water for steaming and steam cook the Rava idli for 10-15 minutes in medium flame.
7. Serve hot Rava idli with healthy  coriander chutney.

Tips

1. You can add the veggies of your choice.
2. Once done do not take out the rava idlis immediately. Leave it undisturbed for 5 minutes and remove it with a sharp edge spoon to keep the texture intact.
3. Make sure the Rava is well roasted before making the Rava idli batter.
4. Adding eno or baking soda is must else the idli will become hard.
5. Avoid using flavored eno, use the regular one.
