Spinach and sweet corn is a match made in heaven, my daughter loves sweet corn and enjoys this combination. I leave no chance to sneak in some extra spinach to make it a healthier option. Being from south India, dosa is a staple at our home, I avoid giving plain dosa in tiffin box as it can dry out and can become chewy. This Spinach and Sweet Corn Dosa Rolls is an excellent substitute to regular dosa and I am sure your little one will absolutely love it. In this recipe, I have used Shepherd spinach.
Grapes and Spinach Sweet Corn Dosa Rolls – Healthy Lunchbox Recipe
Ingredients to Prepare Spinach and Sweet Corn Dosa Rolls
- Dosa Batter – 1 cup
- Boiled sweet corn – 1 cup
- Blanched Spinach – 1/2 cup
- Butter – 2 tablespoons
- Pepper – 2 teaspoon
- Oregano – 2 teaspoon
- Garlic powder – 1 teaspoon
- Salt – To taste
Method to Prepare Spinach and Sweet Corn Dosa Rolls
1. Take a pan, heat butter and add boiled sweet corn and toss for 2-3 minutes in medium flame.
2. Rinse the spinach in running water 2-3 times. Fill a large pot of water and bring it to boil, once the water is hot add spinach leaves to the boiling water and after 20-30 seconds, put the spinach leaves in ice-cold water to stop cooking. The spinach is now blanched. Chop the blanched spinach, add to the sweet corn and toss for another 1-2 minutes until the excess water is absorbed.
3. Add salt, pepper, oregano, and garlic powder and mix everything together.
4. The Spinach and Sweet Corn Stuffing is ready, allow it to cool and meanwhile prepare dosa.
5. Heat dosa tawa, grease well with oil . Pour 1 ladle full of dosa batter on the center and gently spread the batter into circular motion so that you get a thin dosa. Keep the flame low.
6. Spread the spinach and sweet corn mix on the half-cooked dosa, drizzle butter on the sides and close the dosa with a lid. Allow the dosa to cook in medium flame for 1-2 minutes .
7. Once cooked, gentle roll the dosa and cut into small rolls.
8. The Spinach and Sweet Corn Dosa Rolls are ready.
Tips
1. You can also add grated cheese on the dosa rolls to make it yummy.
2. You can increase or decrease the quantity of sweet corn and spinach.
3 . Idli batter works well to prepare dosa. Make sure the final batter is a bit watery.
4. Blanching of spinach is a crucial step, please don’t ignore else tiny tummy of kids won’t be able to digest the spinach well.
