Chickpea Gravy and Garlic Butter Roti – Lunchbox Recipe

Chickpea is a superfood and it is loaded with lot of health benefit. Chickpeas are the best source of manganese, folate and vitamin B6. Chickpeas are incredible plant-based protein that contains a good amount of iron and zinc. This recipe is not super quick but you can try it out as a healthy lunchbox option.

Ingredients For Chickpeas Gravy

  • Black chickpea soaked overnight- 1 cup
  • Medium-sized pureed tomato – 2
  • Roughly chopped onion – 1
  • Ginger garlic paste – 1 tablespoon
  • Turmeric powder- 1 teaspoon
  • Chilli powder – 1/2 spoon
  • Coriander powder – 1 spoon
  • Chole masala – 2 spoons
  • Cumin seeds powder – 1 teaspoon
  • Oil – 2 tablespoon
  • Finely chopped coriander leaves – 1 tablespoon
  • Salt to taste

Method to Prepare Chickpea Gravy

1. Pressure cook the chickpea for 4-5 medium whistles. Allow the pressure to settle off.
2. Take the pressure cooker, add oil, onion, ginger-garlic paste. Cook for 2-3 minutes in medium flame.
3. Add tomato puree and cook for 4-5 minutes until the raw smell of tomato goes off.
4. Add all the masala and salt. Now, cook for another 1-2 minutes in low flame with ¼ cup of water
5. Add the boiled chickpea and pressure cook for 2 medium whistles. Adjust the water, I prefer to keep the gravy thick hence added 1/2 cup of water
6. Garnish the chickpea gravy with finely chopped coriander leaves.

Ingredients for Garlic Butter Roti

  • Whole wheat flour – 2 cups
  • Crushed garlic pod – 7-8 nos
  • Finely chopped coriander leaves – ½ tablespoon
  • Butter -2 tablespoon

Method To Prepare Garlic Butter Roti

1. Take a large mixing bowl and add whole wheat flour and salt, knead a soft dough using boiled milk. Once the dough is ready cover and keeps it aside for 15 minutes.
2. Take a small-sized dough and roll it into a roti.
3. Put the roti on hot tawa and cook both the side until small blisters start to appear on the roti.
4. To prepare garlic butter, take a small pan to add butter and crushed garlic pods, cook for 30-40 seconds only. Turn off the flame and add finely chopped coriander leaves.
5. Once the roti is cooked completely spread a generous amount of garlic butter on the roti.

 

Tips

1. You can prepare the roti dough using cold water.
2. You can also make use of white chickpeas to prepare the gravy.
3. While heating the butter, add 1 teaspoon on oil this will ensure that the butter doesn’t burn off.
4. Always add chopped coriander once the flame is turned off.
